Stuffed Bell Peppers/Stuffed Capsicum

Stuffed capsicums are a lip smacking snack or dinner recipe, loaded with yummy fillings and topped off with melted cheese, this sure looks exotic but actually is a pretty easy one.

Ingredients
1. 3 capsicums
2. 3 tbsp mozzarella (any) cheese
3. coriander leaves
4. 1 tsp oregano (optional)
5. 1/2 tsp red chilli powder
6. 1 tbsp red chilli sauce (optional)
7. 100g paneer chopped
8. 1 tomato chopped
9. 1 green chilli, finely chopped
10. 1 tbsp garlic, finely chopped

How to make it Healthier
1. You can also cool the capsicum on a normal pan flipping in between instead of baking.

Instructions

To Make the filling:

1. Heat oil in a pan. Once the oil is hot, add the chopped onions and let them cook for a few seconds.
2. Add the finely chopped garlic, finely chopped green chillies, finely chopped and deseeded tomatoes, finely chopped paneer, black olives, red chilli powder, red chilli sauce, dried oregano, chopped coriander leaves and salt and mix all the ingredients well.
3. The filling is ready. Put off the flame and let it cool down for five minutes.
4. Once the filling cools down, add the grated cheese and mix well.

To make the stuffed capsicum:

5. Use medium-sized capsicums. Chop the capsicum into half and then deseed it to make nice cups of capsicum. Don’t throw away seeds, mix them in the filling.
6. Fill the capsicum cups with the filling. The filling should be in the level of the capsicum.
7. Garnish it with grated cheese.
8. Place the capsicums on a baking tray and bake them at 180 degrees Celsius for about 10 – 15 minutes.
