Chinese Stir Fry Veggies

Asian cuisines entice you with onion, garlic, ginger, sesame, hot chilli and sweet bell peppers but did you know you can have your good old delicious Chinese stir fry veggies in a way which is perfectly healthy and equally tasty?
Ingredients
1. Oil/Butter (2 Tbsp)
2. Garlic (1 Tbsp)
3. Ginger (1 Tsp)
4. Green Chili (2 Pieces)
5. Onion (1 Large)
6. Bell Pepper (1 Cup)
7. Mushrooms (1 Cup)
8. Broccoli (1 Cup)
9. Water (2 Cups)
10. Chili Garlic Sauce (1 Tbsp)
11. Tomato Paste (1.5 Tbsp)
12. Soy Sauce (1 Tsp)
13. Salt To Taste
14. Besan (2 Tbsp)
15. Water (4-5 Tbsp)
16. Spring Greens (1 Cup)
17. Sesame seeds (2 tbsp)

How to make it Healthier
1. Please do not use babycorn or corn.

2. AVOID cornflour and tomato sauce, use besan and tomato paste in place of these.

3. You can also add toasted sesame seeds to add a slight crunch.

4. If you add paneer instead along with veggies, you also get an interesting chilli paneer recipe.

5. Please use soy sauce in extreme moderation, and rarely.

Instructions

1. Take a frying pan and add 2-3 tbsp of oil/butter.
2. Once the oil heats up add 1-1.5 tbsp of chopped garlic, 1 tbsp of chopped ginger and 2 slit green chillies.
3. Stir till the garlic turns slightly brown.
4. Then add about 1 cup of onions ( diced and petals separated) and 1 cup of green bell peppers ( capsicums) and 1 cup of mushrooms. Stir for 20 seconds.
5. Now add 1 cup of broccoli. Stir all of these veggies for about 10 seconds.
6. Add about 2 Cups of water to the veggies and allow the water to boil.
7. Once the water starts boiling add 1 tbsp of chilli garlic sauce , 1.5 tbsp of tomato paste and 1 teaspoon of soy sauce.
8. Add salt according to taste.
Mix it well and allow the sauce to boil.
9. In the meantime Take 2 tbsp of besan in a separate bowl and add 4-5 tbsp of cold water.
10. Mix this well till the besan is completely dissolved and add this to the vegetables.
11. Mix all of this well and let it cook for about 15 secs on a high flame.
12. Finally add some finely chopped spring greens, mix and serve.
