A delicious recipe to ensure both fat and green intake. Brocolli and cheese are a great healthy combination for all your snack cravings. Enjoy with a spicy dhania pudina chutney or garlic chutney as per your taste.
Brocolli Cheese Balls
Ingredients
1. 1 head of broccoli
2. 1 cup (110g) Cheddar cheese, shredded
3. 2 garlic cloves, crushed
4. 1/2 onion, finely chopped
5. 3 Eggs
6. 2 tablespoons chopped parsley
7. 1 tablespoon Olive oil
8. 1 teaspoon oregano
9. Salt to taste
10. 1/4 teaspoon Black Pepper

1. Please do not use bread crumbs, you can always use crushed nuts for the crunch or psyllium husk (Isabgol) for binding the mixture.

Instructions

1. Preheat oven to 400F (200C). line a baking tray with parchment paper.
2. Finely chop broccoli florets, transfer into a large bowl.
3. Add shredded cheddar, crushed nuts, oregano, salt, pepper, chopped onion, garlic, chopped parsley, eggs and olive oil. Mix until well combined.
4. Shape into balls, place on the baking tray.
5. Bake for 20-25 minutes or until golden brown.
