Almond Flour pancakes are a super breakfast alternative to start your day with a protein punch. With the goodness of both eggs and almonds, you can have this with some berries and loads of butter.
Almond flour pancake
Ingredients
1. 2 Eggs
2. 2 tablespoons Oil or melted butter
3. 3 tablespoons Milk of your choice
4. 1 teaspoon stevia or other sweetener
5. 1 teaspoon Vanilla extract
6. 1 cup (95g) Ground almonds/almond flour
7. 1/4 teaspoon Salt
8. 1 teaspoon Baking powder
9. Butter/oil of choice for frying

How to make it Healthier
1. Do not use any sugary sauces or excessive sweetener in the recipe, if at all needed, use sweeteners like xylitol, erythritol and stevia.

2. You can make Almond flour at home by grinding some almonds.

3. You should not have more than 20 Nuts in a day, so make sure you ensure that while having almond flour pancakes. You can also add some coconut flour to the batter as well, works very well.

Instructions

1. In a large bowl, beat eggs, oil, milk and vanilla extract.
2. Add ground almond flour, baking powder and salt. Stir until combined.
3. Heat a skillet over medium-low heat, melt one tablespoon butter or oil.
4. Scoop about 1/4 cup of the batter, cook for 1-2 minutes, until golden brown at the bottom and bubbles appears on top, flip and cook for about 1-2 minutes more.
5. Serve!
