A very yummy, simple and healthy dish made from puffed lotus seeds or foxnuts which we also call makhana, curd and Indian spices. With the creamy texture, this recipe makes a perfect side snack for your meals, although always remember to have calorie dense food first, and things like buttermilk, water, lassi and raita later so you don’t feel full before eating properly!

Ingredients
1. Curd – 2 cup (500 grams)
2. Louts seeds – 1 cup (20 grams)
3. Mint, Coriander leaves – 10 to 12
4. Cumin powder – ½ tsp (roasted)
5. Black salt – ½ tsp
6. Salt – less than ½ tsp
7. Green chilly – 1

How to make it Healthier
1. You can also skip makhana and add cucumber, kakdi to enjoy the raita with even healthier veggies.
2. Add the toasted makhana to the seasoned curd just before serving as it may become soggy if kept for long time.

Instructions

1. Roast makhana on low flame.
2. Whisk curd properly.
3. Milk is optional. If curd is thick then you can use it to dilute. Also if not using fresh curd, you can use milk to reduce its sour taste. Adjust milk quantity accordingly.
4. You can use mint leaves also in place of coriander leaves to give minty flavour.
5. Add spices, jeera powder, chilli powder, salt and chilli.
