A simple and delicious Idli recipe for your craving for south indian delicacies, this recipe fits perfectly in your healthy lifestyle and doesn’t lets you miss rice idli at all, try it out with some amazing coconut chutney or the good old green chutney!

Ingredients
1. 1 cup Moong dal
2. 1/4 cup Curd
3. 1/4 cup grated Carrot
4. 1/2 inch grated Ginger
5. Coriander leaves
6. 1 Green chilli
7. 1 tbsp ghee
8. 1/2 tsp mustard seeds
9. Curry leaves
10. A pinch of Heeng
11. Salt
12. 1 tsp Eno/ baking soda

How to make it Healthier
1. You can make this idli with different kinds of dal as well.

2. You can also add some green veggies like palak or grated lauki to your batter for more nutrition.

3. Please use eno/baking soda in moderation and not too frequently.

4. Best to use ghee to cook this recipe.

Instructions

1. Soak the yellow moong dal for 4 hours, then drain and blend in a mixer to a smooth paste without using any water.
2. Heat up 1 tbsp ghee, add mustard seeds, chillies and curry leaves. Add the tadka to the dal paste. And add carrots, curd, ginger, coriander to the bowl.
3. Just before steaming, add eno/baking soda to the batter and pour 2 tsp water over it.
4. When the bubbles form, mix gently.
5. Grease the idli moulds using oil, put spoonfuls of the batter into idli moulds and steam in a steamer for 10 to 12 minutes or till the idli are cooked.
6. Cool slightly, de-mould and serve immediately with healthy coconut chutney or chilli garlic chutney.
